Trader Joe’s Veggie Chili


Ingredients:

  • 1 Packet tempeh, crumbled

  • 1 can kidney beans, drained and rinsed

  • 1 can northern beans, drained and rinsed

  • 1 can black beans, drained and rinsed

  • 2 cans dice tomatoes with juice 14.5oz

  • 1 can tomato paste (6 oz)

  • 1 large yellow onion chopped

  • 3 cloves garlic, chopped or minced

  • 1 red bell pepper seeded and chopped

  • 2 cups vegetable broth

  • 1 tbsp coconut aminos or vegan Worcestershire sauce

  • 3 tbsp chili powder

  • 1 tbsp dried oregano

  • 2 tsp cumin

  • 1 tsp dried basil

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1 tsp cayenne (optional)

  • 1 tbsp oil


Instructions:

  1. Heat skillet to medium.

  2. Add 1 tbsp oil to pan.

  3. Throw in onion, garlic, and crumbled tempeh

  4. Sauté the onion and garlic until they have softened/browned (5ish minutes)

  5. While the onion, garlic, and tempeh are cooking, dump the rest of the ingredients into a crockpot

  6. Next, add in the onions, garlic, and tempeh

  7. Stir it all together

  8. Turn crockpot on low, and leave it for a few or more hours! The longer it sits the more the flavors will marry! so..."set it and forget it!"

  9. Top with whatever you want and, as always,

  10. Enjoy!
