The Yummiest Gingerbread Cookies


  • 1/3 cup vegan butter (Miyokos) or coconut oil

  • 1/8 cup blackstrap molasses

  • 1/2 cup coconut sugar

  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)

  • 1.5 cups gluten free flour

  • 1 tsp cinnamon

  • 1 tsp ginger

  • 1/2 tsp cloves

  • 1/2 tsp nutmeg

  • 1/4 tsp salt

  • 1/2 tsp baking soda


  1. Make flax egg in small separate bowl or ramekin

  2. Mix together flour, spices, baking soda, and salt

  3. In separate bowl, mix together vegan butter (or oil), molasses, coconut sugar, and flax egg.

  4. Stir in flour mixture to the wet mixture. Knead with hands if kneaded (haha!)

  5. Cover bowl and chill dough for at least an hour (If you want to make cutouts)

  6. Preheat oven to 350ºF

  7. On a lightly floured service, roll out dough 1/4in thick and cut out your cookies!

  8. Bake for 8-12 minutes (no need to grease the baking sheets)

  9. Remove from oven.

  10. Let cool.

  11. Enjoy!
