Tabouli Salad

Ingredients:

  • Parsley, 2 bunches

  • Mint, 1 small brunch (I just used some mint for our garden)

  • 1 large tomato, chopped

  • 1/4 red onion

  • Juice from 1 large lemon

  • Salt to taste (~1 tsp)

  • 1/3 cup riced cauliflower or bulgur wheat

  • 1/8 cup of EVOO

  • Pepper (optional) to taste

Instructions:

  1. If using bulgur wheat, soak in small bowl of water and set aside.

  2. Discard parsley stems and mint stems

  3. Throw parsley, mint, tomato, onion, lemon juice, salt, and EVOO in a food processor.

  4. Pulse a few times until all ingredients are chopped and combined.

  5. Transfer to large bowl.

  6. Drain bulgur wheat if using.

  7. Fold in bulgur wheat (or cauliflower rice)

  8. Enjoy!

P.S. if you don’t have or don’t want to use a food processor you can finely chop all ingredients and combine by hand! I’ve done both and both come out to being delicious!
