Quick and Easy Breakfast "Chorizo" Tacos

I typically don't eat pre packaged food, but when your husband is willing to make your breakfast with mindful and healthy ingredients I can't say no! All I can say is make sure the soyrizo is as pure as possible with minimal preservatives (they're out there)! Also, it has to be organic..no exceptions!
‘Chorizo’ Tacos Ingredients:
1 red pepper
1 packet of spicy organic soyrizo, sliced, chopped, or crumbled
1/2 tablespoon of coconut oil or olive oil
6 corn tortillas
Bunch of cilantro (chopped)
Other toppings: Chopped lettuce, chopped red cabbage, hot sauce, spicy "mayo"
Preheat oven to 350°F
Sauté onion and red pepper on high in olive oil until soft.
Cook for 7 mins
Warm taco shells in oven while soyrizo is cooking. I place them right on the rack, but you can place them on a baking sheet or if you prefer
Heat for appx 10 minutes flipping halfway through
Top with whatever you want! I used cilantro, lettuce, cabbage, and a homemade spicy “mayo” in the first picture, and just some hot sauce and cilantro in the second.
