Pretty in Pink Overnight Oats

Ingredients:

  • 1/2 cup oats

  • 1 tbsp chia seeds

  • 1 tsp pitaya powder (optional)

  • 1 tsp maca powder

  • 1/4-1/2 tsp cinnamon

  • 1 cup almond or coconut milk

  • 1 tsp maple syrup or a few stevia drops

  • 1/4 cup cauliflower rice

Instructions:

  1. Mix all ingredients together until well combined.

  2. Cover and place in fridge.

  3. Wait at least 30 minutes or leave overnight.

  4. Remove from fridge and stir the oats.

  5. Add more liquid if too thick.

  6. Top with whatever you want (I used kiwi, raspberries, and coconut flakes)!

  7. Enjoy!
