Stuffed Baby Bella Pesto Bites

  • Baby portobello mushrooms

  • pesto (I used the vegan kale pesto from Trader Joes)

  • Balsamic Reduction (Trader Joe's/store bought or make at home)

  • scallions to garnish


  1. Pop stems out of mushroom caps and rinse mushrooms

  2. soften mushrooms (in oven at 350F for 8-10 minutes or in microwave for a couple minutes. All microwaves vary so check on them every minute)

  3. Spoon pesto into softened mushroom caps

  4. Put in oven to warm the pesto (I used broil on high for 3ish minutes since I softened the mushrooms in the microwave, but you can keep your oven on 350F and check every 5 minutes)

  5. Remove from oven

  6. Drizzle with balsamic glaze

  7. Top with scallions

  8. Serve!
