Overnight Oats | Carrot Cake Style

Ingredients:

  • 1/2 cup oatmeal

  • 1/2- 3/4 cup milk of choice

  • 1 tbsp chia seeds

  • 1/2 tsp cinnamon

  • 1/4 tsp allspice (optional)

  • 1 tsp maple syrup

  • 1/2 carrot, shredded (1/4-1/2 cup)

  • 1/2 banana, sliced

  • 1 tbsp chopped nut of choice

  • 1 tsp shredded coconut (optional)

Instructions:

  1. Mix oatmeal, milk, chia seeds

  2. Add spices (cinnamon and allspice) and maple syrup

  3. Mix in or top with shredded carrots and bananas

  4. Seal in air-tight container for 20 min or overnight

  5. Top with nuts and shredded coconut

  6. Enjoy!

P.S.

I usually wait to add the nuts so they stay extra crunchy, but you can just as easily add them into the mix from the get go!
