Open Faced Tempeh BLT

Ingredients:

  • 1/3-1/2 package of tempeh

  • 1/4 avocado, mashed

  • 1 tomato, sliced

  • 1 carrot for 'carrot bacon' topper

  • 1 romaine lettuce leaf, finely chopped

  • Everything but the bagel seasoning (optional)

  • Salt to taste

Instructions:

  1. Make carrot "bacon" (previous recipe posted)

  2. Slice tempeh in half longways

  3. Place on skillet to char. Salt/season to taste

  4. Cook for 3-5 minutes per side

  5. Remove from skillet

  6. Spread avocado on prepared tempeh

  7. Sprinkle with "everything but the bagel" seasoning (buy at Trader Joe's)

  8. Top with tomatoes, lettuce, and carrot "bacon"

  9. Enjoy!

P.S. You can also put this on toast instead of tempeh! It's quick, easy, and very tasty too!
