Oatmeal Chocolate Chip Cookies

  • 1 cup oats

  • 1 cup almond flour or meal

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp sea salt

  • 1/4 cup +2 tbsp (this equates to 6tbsp) applesauce

  • 1/4 cup maple syrup

  • 8 drops stevia

  • 2 flax eggs (2 tbsp ground flax + 6 tbsp water)

  • 1 tsp vanilla extract

  • 3/4 -1 cup chocolate chips (optional)


  1. Heat oven to 350°F

  2. Make flax egg and let sit.

  3. Line baking sheet with parchment paper or lightly oil baking sheet itself. Set aside.

  4. In a bowl, mix together oats, almond flour, baking soda, baking powder, cinnamon, and sea salt.

  5. In a separate bowl, mix together apple sauce, maple syrup, stevia, flax eggs, and vanilla extract.  Mix until fully combined.

  6. Add dry ingredients to the wet ingredients. Mix until combined.

  7. Fold in chocolate chips.

  8. scoop 1-2 tbsp dough balls onto baking sheet.

  9. Use a fork or your hand and flatten them into discs/patties.

  10. Bake for 10ish minutes.

  11. Remove from oven, transfer to a baking rack, and let cool completely.

  12. Enjoy!

P.S. You can use coconut oil instead of applesauce (same amount). It will yield a more traditional chocolate chip cookie. The applesauce version has a bit more oatmeal flavor. Bake time is a bit longer for the coconut oil version (appx. 15 minutes).
