Mint Chip Smoothie

Ingredients:

  • 1 cup almond or coconut milk

  • 1 cup frozen spinach

  • 1/2-1 banana, preferably frozen

  • 1 tbsp almond butter

  • 1/2 tsp peppermint extract

  • 1 scoop vegan protein powder

  • 1 tbsp coconut flakes

  • 2 ice cubes for added coldness and thickness

  • cocoa nibs

Optional add-ins

  • 1 tsp chia seeds

  • 1/4 Avocado

  • Fresh mint leaves

  • Coconut water

Instructions:

  1. Blend all ingredients together except cocoa nibs.

  2. Top with or stir in cocoa nibs

  3. Enjoy!
