Korean BBQ Jackfruit Lettuce Wraps

Ingredients:

  • 1 can jackfruit

  • 1/4-1/2 red onion, finely chopped

  • 1/2 in fresh ginger, finely chopped

  • 2 cloves garlic, finely chopped

  • 4 mushrooms, sliced

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • Lime juice squeezed from 1/2 lime

  • 1 tbsp. Sriracha

  • 3 tbsp. coconut aminos

  • Cilantro and green onions to garnish

  • Lettuce (romaine or bib)

Instructions:

  1. Cut jackfruit so it becomes "pulled"

  2. In bowl, combine jackfruit, garlic powder, salt, lime juice, sriracha, and coconut aminos

  3. Set aside

  4. Heat skillet to medium

  5. Add red onion, mushrooms, fresh garlic, and fresh ginger to skillet

  6. Sauté until tender

  7. Add Jackfruit combo to skillet and mix all ingredients until well combined

  8. Once heated and well combined, remove from skillet

  9. Transfer to lettuce shells

  10. Top with cilantro and green onions

  11. Enjoy!
