Hearty Zoatmeal

Ingredients:

  • 1 cup zucchini, shredded

  • 1 cup almond or coconut milk

  • 1 tbsp chia seeds or flax meal

  • 1/2-1 banana, mashed

  • 1 tsp cinnamon

  • 1 tsp maca and/or cocoa powder

Toppings (all optional):

  • Fruit of choice (I used blackberries and blueberries)

  • Coconut flakes

  • Sliced almonds

  • Chopped walnuts

  • Etc. (The sky is the limit)

Instructions:

  1. Place almond/coconut milk, oats, and zucchini in saucepan.

  2. Allow to simmer until most of the liquid is absorbed

  3. Add chia seeds (or flax meal), banana, cinnamon, and maca (or cocoa powder)

  4. Stir until combined.

  5. Cook for another minute or 2

  6. Transfer your zoats to a bowl

  7. Add your toppings

  8. Enjoy!
