Grain-Free and Sugar-Free Pumpkin Pancakes

Ingredients:

  • 1 cup oat flour (you can blend oats in a blender)

  • 1/3 cup pumpkin purée

  • 1.5 tsp baking powder

  • 1/8 tsp salt

  • 3/4 cup plant milk or (1/2 cup plus 1/4 cup water)*

  • 1/2 tsp cinnamon and/or 1/2 tsp pumpkin spice

  • 2 tbsp maple syrup or 1/8 tsp liquid stevia

Instructions:

  1. Mix all ingredients together until well combined

  2. Turn on skillet to medium heat

  3. Dollop preferred size on skillet.

  4. Cook for a couple minutes (until bottom is browned) on one side then flip and flatten to desired width and cook until underside is also browned

  5. Remove and let cool

  6. Add desired toppings

  7. Enjoy!


*I used 1/2 cup canned coconut milk + 1/4 cup water
