German Chocolate Torte

Cake ingredients :

  • 1 cup cocoa powder

  • 1/2 cup maple syrup

  • 1/2 cup applesauce

  • 1 tsp vanilla extract

  • 3 tbsp aquafaba (leftover liquid from unsalted canned chickpeas)

  • 1 tbsp baking powder

  • 1/4 cup chocolate chips

German chocolate icing Ingredients:

  • 1 cup canned evaporated plant milk

  • 1 cup dates

  • 1 tbsp chia seeds

  • 1/2 cup coconut oil, melted

  • 1 tsp vanilla

  • 1 1/2 cups shredded coconut

  • 1 cup chopped pecans

Cake Instructions:

  1. Preheat oven to 350°F

  2. Lightly grease oven safe baking dish

  3. Mix all cake ingredients together until well combined

  4. Pour into baking dish and put into oven

  5. Bake for 35-45 minutes

  6. Allow to cool completely or will be too fudgy

Icing Instructions:

  1. Soften dates. (I usually put them in a microwave for 30 seconds)

  2. Add evaporated milk, dates, oil, chia seeds, and vanilla to a blender.

  3. Blend until smooth

  4. Pour into large bowl.

  5. Fold in coconut and chopped pecans

  6. Ice cake once cake is fully cooled

  7. Enjoy!

P.S.

The frosting will harden if you place it in the refrigerator. It can easily be warmed and softened in the microwave or if left at room temperature.
