Easy Peasy Pad Thai

  • 1 package of shirataki noodles, drained and thoroughly rinsed

  • 3-4 drops of stevia

  • 3 tbsp of coconut aminos

  • 2 tbsp of citrus (I’d recommend lime, but all I had was a semi ripe tangerine from a local tree..surprisingly delicious)

  • A squirt of Sriracha

  • 1 tbsp of peanut butter

  • 1/4 red onion, chopped

  • 2 cloves garlic

  • 2 tsp coconut oil

  • 1/2 cup diced mushrooms (optional)

  • 1/2 cup broccoli (optional)

  • 1/2 cup peas (optional)

  • 1/4 red bell pepper thinly sliced (optional)

  • Chopped fresh cilantro

  • Scallions/green onions, sliced


  1. Mix/whisk coconut aminos, stevia, citrus, Sriracha, and peanut butter together in a bowl. Set aside.

  2. In skillet, heat up 2 tsp coconut oil on medium high heat.

  3. Add the onions and garlic to the pan. Sauté until cooked/tender.

  4. Add the optional veggies if using (broccoli, peas, mushrooms, etc.)

  5. Cook until tender.

  6. Next, add shirataki noodles and mix around until all moisture absorbed from noodles

  7. Finally, add the sauce mix and stir around until moisture absorbed

  8. Top with cilantro and scallions

  9. Get your chopsticks ready and enjoy!

P.S. you can absolutely top or mix in your protein of choice (mine is usually tempeh)!
