Crumbly, Fudgy Brownies


Ingredients:

  • 1/3 cup chocolate chips (+ 1/4-1/2 cup extra chocolate chips for mixing in, optional)

  • 3/4 cup gluten free flour

  • 1/4 cup cocoa powder

  • 1/2 tsp sea salt

  • 2 flax eggs

  • 1/2 tsp baking soda

  • 1/2-3/4 cup coconut sugar (I used 1/2)

  • 1/2 cup coconut oil or miyikos butter

  • 1/4 cup water

  • 1 tsp vanilla

  • A few dates (optional)


Instructions:

  • Preheat oven to 325F

  • Melt 1/3 cup chocolate chips. I did it in the microwave at 30 second intervals. (It took approximately 90 seconds for me)

  • Make flax eggs (2 tbsp flax meal and 6 tbsp water)

  • Combine flour, cocoa powder, salt, baking soda, and sugar

  • Combine melted chocolate chips, oil, water, flax eggs, and vanilla

  • Put wet mixture into dry until well combined

  • I chopped up a few dates and mixed them in as well (optional)

  • You can also mix in the extra chocolate chips

  • Put in 8x8 greased pan or cake pan

  • Bake for 30 min (or until knife or toothpick comes off clean when inserted in the middle)

  • Remove from oven and let cool

  • Cut into squares and enjoy!
