Coconut Cashew Yogurt

Ingredients:

  • Meat from 1 young coconut (~1 cup)

  • 1 cup raw cashews, soaked for 30 min (longer if needed to soften)

  • 1 cup water, add more if too thick

  • 1/8 tsp probiotic

Instructions:

  1. Drain cashews

  2. Throw all ingredients into a blender

  3. Blend until smooth

  4. Transfer to very clean jar

  5. Loosely cover with lid

  6. Place in dark & room temperature place for 12-24 hours

  7. Open and stir

  8. Refrigerate

  9. Use as a base for all kinds of recipes!

  10. Enjoy!
