Chocolate Chip Peanut Butter Cookies

  • 1/2 cup almond flour

  • 1/2 cup oats or oat flour (put oats in the blender to make flour)

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp sea salt

  • 3/4-1 cup loosely packed dates

  • 1/4 cup water

  • 1/2 cup creamy peanut butter

  • 2 flax eggs (2 tbsp flax+6 tbsp water)

  • 1 tsp vanilla extract

  • 1/4-1/2 cup choc chips

  • 1/2 tsp coconut oil to grease the pan


  1. Preheat oven to 350°F

  2. Make flax eggs and let sit

  3. Combine dry ingredients (almond flour, oat flour, baking soda and powder, sea salt)

  4. Heat dates to soften (soak in boiled water for 10 minutes or heat in microwave for a minute)

  5. Place wet ingredients in blender or food processor (dates, water, peanut butter, vanilla extract, flax eggs) to combine

  6. Mix wet and dry ingredients together

  7. Fold in chocolate chips

  8. Grease baking sheet

  9. Place tbsp size dollops onto baking sheet

  10. You may need to wet your hands because batter will be super sticky

  11. Bake for 10-12 minutes

  12. Let cool completely

  13. Enjoy!

P.S. if you add chocolate chips the peanut butter taste will be mild. You'll get a stronger taste if you use minimal chocolate chips or none. I love both ways!
