Chickpea Quiche

Ingredients:

  • 1 cup chickpea flour

  • 2 tbsp nutritional yeast

  • 1/2 tsp Himalayan black salt

  • 1/4 tsp sea salt

  • 1 tbsp Italian seasoning

  • 1/2 tsp baking powder

  • 1 cup water

  • 1/4 cup sun dried tomatoes

  • 1/4 cup finely chopped onions

  • 3 cloves garlic, minced or finely chopped

  • Squeeze from 1/4 lemon

  • 1 cup fresh spinach or 1/2 cup frozen (thawed and drained)

  • 1/2-1 tsp oil to grease pan

  • Small round cake pan (I used 9in and had to layer the quiche)

Instructions:

  1. Preheat oven to 350F

  2. Grease pan

  3. Mix all other ingredients together until well combined (all ingredients except oil)

  4. Pour into baking pan

  5. Bake for 15-20 minutes

  6. Let cool a bit

  7. Enjoy
