Baked Plantain Chips (2 ways)

Ingredients:

  • 1 GREEN plantain (yellow is too ripe)

  • 1 tbsp oil (I use coconut or EVOO)

  • 1 tsp salt

OR for some Mexican flare:

  • 1 green plantain

  • 1 tbsp oil

  • 1/2 tsp of garlic powder

  • 1/2 tsp of cumin

  • 1/2 tsp of paprika

  • 1/2 tsp of chili powder

  • 1/2 tsp of salt

Instructions:

  1. Preheat oven to 400°F

  2. Peel plantains

  3. Slice thinly either with knife or mandolin

  4. In bowl combine oil and salt +/- spices

  5. Toss plantains in oil and spice mix until coated

  6. Transfer to baking sheet in single layer

  7. Cook for 15 minutes (give or take a minute) flipping halfway through

  8. Mine were perfect after 7 minutes each side

  9. Remove from oven and let cool.

  10. Enjoy!
